Curried Veggies with Rice
Ingredients:
- 1 cup rice.
- 2 medium potatoes, chopped.
- 1 medium onion, chopped.
- more chopped vegetables if desired such as carrots, peas or green beans.
- 2 tbs oil
- 1 tbs curry powder (1/2 tbs for a mild curry flavor).
- 5 tbs milk or plain yogurt.
- 2 tbs butter or margarine.
- 1/2 tbs salt
Directions:
- Prepare rice.
- Stirfry vegetables on high heat in oil.
- When Potatoes are soft add curry powder, milk or yoghurt, butter or margarine and salt.
- Remove from heat and serve vegetable mixture over rice mixture.
