Foolproof Rhubarb Crumble
Ingredients:
Serves: 2-4
- 4 stalks rhubarb, cut into 1/2 inch pieces
- 1 apple, peeled, cored and cut into 1 inch pieces
- 1 cup sliced fresh or frozen strawberries
- 1/3 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 tablespoons butter or margarine
- 2/3 cup brown sugar
- 2/3 cup quick-cooking oats
Directions:
Preheat oven to 350 degrees
- In a baking dish, combine rhubarb, apple, and strawberries.
- Stir together sugar and cinnamon in small cup. Sprinkle over fruit.
- In a mixing bowl, combine flour, baking powder, and salt. Add butter, mixing with a fork until crumbly. Stir in brown sugar and oats. Sprinkle over cinnamon sugared fruit.
- Bake for 45 minutes or until lightly browned.
