Foolproof Rhubarb Crumble

Ingredients:
  • 4 stalks rhubarb, cut into 1/2 inch pieces
  • 1 apple, peeled, cored and cut into 1 inch pieces
  • 1 cup sliced fresh or frozen strawberries
  • 1/3 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons butter or margarine
  • 2/3 cup brown sugar
  • 2/3 cup quick-cooking oats

Directions:

Preheat oven to 350 degrees

  1. In a baking dish, combine rhubarb, apple, and strawberries.
  2. Stir together sugar and cinnamon in small cup. Sprinkle over fruit.
  3. In a mixing bowl, combine flour, baking powder, and salt. Add butter, mixing with a fork until crumbly. Stir in brown sugar and oats. Sprinkle over cinnamon sugared fruit.
  4. Bake for 45 minutes or until lightly browned.


Serves: 2-4
